How to Make Hard-Boiled Eggs

Hard-boiled eggs are great for breakfast, lunch or a snack. Cook five or six at one time and you’ll be able to make enough egg salad (instructions tomorrow) for a couple sandwiches.

If possible, use organic eggs or ones bought from a farmer who lets his chickens roam and eat grass, insects, larvae, etc. (They'll have more flavor and nutrition.) Commercial eggs from factory farms can spell danger.

I’ve heard many different ways of making hard-boiled eggs, but this is how I do it:

Put eggs in a pot. Add enough cold water to pot to cover eggs by about an inch. Turn on heat, bring water to a boil. When water starts to boil, lower heat, bringing water down to a simmer. Continue to cook eggs for nine minutes. Remove eggs and immediately place in a bowl of very cold water (the colder the better), which will stop the cooking process. Peel and eat immediately or store in refrigerator unpeeled for about five or six days.

Hi Rob, Was raised on a poultry farm and you'd think that I would hate eggs by now but Not so.
Mom (and me too) make hard boiled eggs as follows,
1. Cover eggs 1" with cold water.
2. Bring to a boil.
3. Turn off heat and let stand for 15 minutes.
4. Drain and submerge eggs in cold tap water. 3 times.
5. Enjoy.

Dad always said to use older eggs...they peel better and we ALWAYS set the eggs out on the counter for about 12 hours before boiling.

By the way, some people think that fresh eggs have a darker yolk.... but that is not true.

The best way to tell if an egg is fresh is when you fry it.
If the egg runs out over the pan, it is older. If the egg stays intact in a small shape, it is fresh. Eggs accumulate moisture as they age...even through the shell.
